They charge £16.50 for the dish, but by the time all its expenses are factored in, it makes just 50p in profit, which is also taxed at 25%.
Staffing costs to make and serve the dish comes in at £6.35, the produce is then £4.25. READ MORE: Join our new WhatsApp community Manc Life Then comes VAT at £3.30, utilities at £1.20, rent and rates at 90p, making a total cost of £16.
Its house sugo is orecchiette pasta with a ragu of eight-hour braised beef shin, pork shoulder and nduja sausage. The restaurant added: “We’re definitely not asking you to get the violins out but please bear this in mind when questioning the validity of independent restaurant prices. “Whilst our accountant would tell us to increase prices, source cheaper produce, cull staff & even turn off the air con we’d rather ride the storm with your support and hope for more prosperous days ahead.” Sud, formerly known as Sugo, started out in Altrincham with a site across from the market hall in 2015.
