A huge new ramen and sushi restaurant is set to open off Piccadilly Gardens. Maki & Ramen already has a rash of locations in Scotland, and is now heading to the North West in its first branch south of the border.

It will open its Manchester spot on York Street, in a former office building space, next month. As part of its launch, it’s also giving away a trip to Japan via its website. The first opened in 2015 in West Richmond, by founder and chef Teddy Lee, who studied his craft at one of Tokyo’s sushi academies.

The restaurants specialise in ramen, propped up with an eight-hour slow-cooked broth, and accompanied by home-made noodles. The menu will feature various tonkotsu-based ramens, the stock made from simmering pork bones for up to 18 hours at a time.
