The UK-first offering will be opening at the People's History Museum later this spring, serving a menu made from produce that would have otherwise gone to waste.

Overlooking the River Irwell on the edge of Spinningfields, the menu at the modern cafe will be mostly vegetarian and vegan and will celebrate sustainable and ethical produce.

An all-day, ever-changing menu will be served during the day times, before switching to small plates and table service drinks in the evenings.
